and fluffy. Tip in the flour and the milk, together with the cinnamon , salt and baking powder and mix till you get a cake batter consistency.
2, Pour into decorative cake mould and bake at 250 * C for 15 minutes.
3, Remove , demould and cool on a wire rack till just warm.
4, Serve warm at room temperature.

, dark moist spice cake, tart lemon spread, currant scones, amazing hot fudge sundae cake, lovely light lemon cake, fruit and cream tarts, frozen desserts, fruit desserts... colorful and delicious.
For dessert we had a raw pineapple upside down cake from Jennifer Cornbleet's "Raw for Dessert" cookbook, which will be in my next post.

week, just because kind of dessert.
I like to use a metal 13 x 9 baking pan for this particular cake, not the Pyrex glass pan. Also, only use fresh lemon juice and zest. Don... and sweet maple glazed ham.
