Twice Cooked Acorn Squash

Since Josh had a dinner meeting tonight, I made myself up some twice cooked acorn squash. Method as follows:
Bake up squash (cut in half and bake at 450 degrees for 1 hour or microwave for 13 minutes)
Scoop out some of the cookedsquash (but not ALL of it, otherwise the "bowl" will not maintain its form)
In a bowl, mix your favorite toppings

to cook-up a batch of spaghetti squash for weeks now, so I was psyched when it finally went on sale at Stop & Shop last week.

This is how to Cook a Grilled Summer Squash Recipe:
Ingredients:
4 summer squash
6 tablespoons of butter
2 tablespoons of brown sugar
half teaspoon ground cinnamon... the time till the sugar is dissolved
Brush the squash with the spiced butter mixture & place under a hot grill
Cook until the squash is tender & lightly browned on both sides

The squash should be sliced thinly lengthwise. Spread the slices in a pan, sprinkle olive oil, balsamic vinegar, salt and pepper over them and roast at 400 degrees until cooked.... His portabello mushroom burgers look amazing – enjoy!
