Here's a recipe, suitable to most diets, from my book, Weight Loss That Works:
Nevada Style Southwestern Fajitas
1 pound eye of round or flank beef steak
1 tablespoon fresh lime juice
1 tablespoon chili powder
1/2 teaspoon dried garlic powder
1/2 teaspoon ground cumin
1 cup red onion, sliced
1 cup green bell pepper, sliced,
1 cup red bell pepper, sliced
6 small low fat flour tortillas, 6 inches in diameter
0r low carb tortillas, 6 inches in diameter
1/4 cup fat free sour cream
1/2 of a ripe avocado
1/4 cup fresh tomatoes, chopped
1/8 cup fresh cilantro, chopped
1 cup iceberg lettuce, shredded
Preheat broiler with rack set about 4 inches below heat. Cut all visible fat from steak. In a small bowl, combine lime juice, chili powder, garlic and cumin. Rub spice mixture over both sides of beef and let stand for 10 to 15 minutes. Broil steak about 3 minutes per side or until desired doneness. Remove steak and let rest 15 minutes before slicing. Sauté onion and peppers in nonstick pan sprayed lightly with nonfat cooking spray until tender. Slice steak across the grain into 1/8 inch slices. Warm tortillas according to package directions. In a small bowl, combine sour cream, avocado, tomatoes and cilantro. Spread a tablespoon of the sour cream mixture over each tortilla. Top with equally divided steak strips, onions, peppers and lettuce. Serve hot. Makes 6 servings. 1 serving equals 1 tortilla topped with 1/6 of other ingredients.
