The first week of my elimination diet is over as of yesterday. So today I start adding back in, one item at a time. I chose, for today, potatoes.
I had boiled little potatoes for breakfast and mashed potatoes for lunch (nothing added except a little salt, of course). Delicious, delicious. So far no reaction, no increase in pain or inflammation.
Of course I do not have to eat just potatoes today. But I do need to eat a lot of them to tempt fate, so to speak. If potatoes are a culprit I should know soon.
Tomorrow I have a problem. I have signed up to attend a meetup at an Indian restaurant. There won't be many of us there and it will be obvious if I do not order anything. I do not think there will be anything simple enough to order that would not include ingredients I am not yet ready to add back in.
I am thinking I'll order something that is as simple as possible and eat very little of it. It's not perfect but at least I am not in the first week.
