Mint-Cilantro Pesto

It's spring and it's time to start eating your leafy greens!! Eating cilantro is now thought to be one of the best natural means to help your body excrete heavy metals. It is said that the compounds in cilantro can even bind to and displace metals from the brain and spinal cord.

"The mechanism of action is unknown. Cilantro alone often does not remove mercury from the body; it often only displaces the metals form intracellularly or from deeper body stores to more superficial structures, from where it can be easier removed"

Mint-Cilantro Pesto

½ cup fresh mint leaves
½ cup of fresh cilantro.
3 T. of olive oil
¼ t. freshly ground black pepper
½ t. of sea salt
1 garlic clove
½ cup sliced almonds, pine nuts, pecans or walnuts

Combine all ingredients in a food processor and process until finely ground. Serve on crackers or pita chips, as a veggie dip, in place of salad dressing, or as a sandwich spread.
