Cinnamon Pecan Muffins

Well, it snowed on Saturday, but I just found out today that our sleds have been taken to the farm house. So there will be no sledding for me this time :(

This weekend was one of the best weekends I've had in months, partly because I forced myself to relax and not do school work. I just read, played scrabble with my parents, watched a movie, went to the bookstore, and baked! P.S this is also ridiculously happy family-ish, but my parents came and got into bed with me this morning. Well, they were kind of just lounging on the end of the bed, but still. It felt so good to ease up on myself and not pressure myself to keep busy, which is kind of what I've been doing since I've been home for the past year. Sometimes I just feel so useless, like I need to do something with my life, so I end up making myself feel stressed to get stuff done and making to-do lists with too many tasks on them for one day. But now that I have this positive diagnosis for Lyme disease, I've been letting myself surrender to the truth that I am sick and it's not all in my head. My body really does need to rest. I am utterly exhausted from this health ordeal, so resting this weekend was wonderful.

The first step in my treatment plan for tackling Lyme is to remove dairy, gluten, and sugar from my diet. My doc says that his patients with RA all feel better when removing these items, and he has had more success treating patients who are off these foods. I was already off gluten and sugar because I know I feel better eating that way, but now I have to eliminate goat yogurt which is the only dairy I was eating. I'm on the healing diet called Specific Carbohydrate Diet, so my gut is healing. This is a recipe that I can eat, and my parents thought it was delicious too!

Cinnamon Pecan Muffins.
Good for breakfast and dessert. They freeze well.

3 T. butter or coconut oil, melted
1/4 cup of honey
1/2 cup milk, yogurt or coconut milk
2 eggs
2 1/2 cups pecan flour (you can order online or process whole pecans into a fine ground)
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup chopped pecans or walnuts
1/2 cup raisins

Topping:
2 T. cinnamon
4 T. honey
2 T. butter

Muffins: In a medium bowl, mix the first ingredients. Then stir in the next 5 ingredients. Spoon batter into lined or greased muffin tin filling each cup 3/4 full/ Mix together topping ingredients and spread on top of each muffin. Bake for 20-25 minutes. Makes 12 muffins.
