why would you get inflammation in the blood

AFAIK, blood cells cannot become inflamed, Jenny, However, inflammation of blood vessels - arteries and veins - is common. It is thought that inflammation of these allows plaque to begin depositing which may eventually lead to blockage of the affected vessels.

High fat diets are one of the main triggers of such inflammation. To reduce such inflammation eat less saturated and trans fat, sugar and other simple carbohydrates and more fruits, vegetables, nuts and foods high in omega-3 fatty acids such as fish, flax seed (aka linseed) and walnuts.
