Squash (any verity) are very nutritious, and tasty. They are high in both nutrients and anutrients, but like all foods are best eaten when in season. In other words eat summer squash in the summer (yellow, white Bush Scallop, Zucchini...) and winter squash in the winter (pumpkin, butternut, acorn, spaghetti...). Summer squash are excellent diet foods because of their high water content and the flesh and seeds are also edible.
Winter squash on the other hand are high in carotenes, complex carbs, potassium, and B vitamins.
