i promise that today’s post will make a LOT more sense than yesterday’s! plus, it’s got an actual recipe in it. that is already an upgrade
to keep ourselves awake yesterday, we went for a nice long walk to the supermarket and stocked up on a few random goodies for dinner. i decided that we needed soup and created a pretty delicious and healthy one after checking out a couple of similar recipes. and after a big bowl of this and a good night’s sleep, i think i may have discovered the jetlag cure.
the key is in the ingredients and spice. it’s a fairly bland broth, but some nice fresh veggies make it truly special.
i didn’t make any measurements really…. just throw stuff in a pot and hope for the best.

the particulars:
1/2 large onion, chopped
3 cloves garlic, finely chopped
2 carrots, chopped
4 celery stalks, chopped
1 red chili, deseeded and finely chopped
1 can cannelini (or other white) beans, drained
1/2 bag of kale, chopped
boiling water
salt and pepper
red chili flakes (optional)
lesson learned: veggies + fiber + spicy + broth = I FEEL SO MUCH BETTER TODAY!
