The GFCF Recipe Experience: Peanut Butter Buddy Bars

This is my GFCF version of an old Nestle Tollhouse recipe discovered while rummaging through some cookbooks my wife found at a yard sale.

Incredibly simple.

And incredibly delicious.

adapted from a Nestle Tollhouse Recipe


1 cup peanut butter
6 tbsp. CF Butter (I used Earthbalance Buttery Sticks)
1 1/4 cups sugar
3 large eggs
1 tsp GF vanilla
1 cup GF all-purpose flour
1/4 tsp xanthan gum
1/4 tsp salt
2 cups GFCF semi-sweet chocolate chips, divided

Preheat oven to 350°. Lightly grease a 9" x 13" pan with cooking spray.

Combine the flour, salt, and xanthan gum in a mixing bowl. Set aside.

In a large mixing bowl, beat the peanut butter and butter together until smooth. Add the sugar, and beat until creamy. Add the eggs and vanilla, and beat until thoroughly combined. Gradually add the flour mixture. Stir in 1 cup of the chocolate chips.

Spread the mixture evenly in the baking pan. Bake at 350° for 20 - 30 minutes or until the top is golden brown and the center is set.

Remove from the oven and immediately sprinkle the remaining chocolate chips over the top. Let stand 5 minutes or until the chocolate chips become shiny and soft, then spread the chocolate evenly over the top.

Cool completely (if you can wait that long!) and cut into 1 1/2 inch bars.
