The GFCF Recipe Experience: Peanut Butter Baby Kiss Cookies

Hershey's calls them Peanut Butter Blossoms, but I've always called them Kiss cookies, those wonderful peanut butter cookies with a big Hershey's Kiss in the middle.
Unfortunately, Hershey's doesn't make a GFCF Kiss.
But that's okay. There are plenty of GFCF semi-sweet chocolate chips available. And 4 baby kisses are just as good if not better than one big Kiss.
For me, that's one for each of my babies.
PEANUT BUTTER MINI KISS COOKIES adapted from Hershey's Kisses Peanut Butter Blossoms Recipe
1/2 cup CF Shortening (I used Earthblanace Buttery Sticks)
3/4 cup peanut butter
1/3 cup sugar
1/3 cup light brown sugar, packed
1 large egg
2 Tbsp CF Milk (I used almond milk)
1 tsp GF Vanilla
1 1/2 cups GF all-purpose flour
3/8 tsp xanthan gum
1 tsp baking soda
1/2 tsp salt
GFCF semi-sweet chocolate chips
Granulated sugar for rolling
Preheat oven to 375°.
Combine the flour, xanthan gum, baking soda, and salt in a mixing bowl. Set aside.
In a large mixing bowl, beat together the shortening and peanut butter. Add the sugar and brown sugar and beat until well combined. Add the egg, milk, and vanilla, and mix well. reduce mixer speed to low and gradually add the flour mixture until well combined.
Place granulated sugar in a small bowl. Shape the dough into 1" balls and roll in the sugar. Place about 2" apart on an ungreased cookie sheet.
Bake at 375° for 8 to 10 minutes or until lightly browned. Remove from oven and immediately press four semi-sweet chocolate chips into the top of each cookie. Place cookies on a wire rack to cool.
