Spinach and Shrimp Gluten Free Pancakes

Ingredients

  • 1 box Gluten Free Pancake Mix or Regular Pancake Mix
  • 2 tbsp Olive/Safflower/Grapeseed or Olive Oil
  • 2 Medium Red Onions, sliced
  • 1/2 tsp Garlic Pulp
  • 1 tsp Paprika or Chili Flakes
  • 1 tsp Black Pepper Powder
  • 2 Tomatoes, sliced
  • 8 oz Fresh Baby Spinach, or Frozen Spinach, thawed and drained
  • 4 oz Cooked Shrimp
  • 3 tbsp Fresh Chopped Cilantro
  • 1 tbsp Chia Seeds, drained
  • 1 inch Ginger, shredded

Cooking Directions

  1. Heat oil in a skillet and fry sliced onions until golden
  2. Stir Fry by gradually adding garlic,ginger, paprika/chilli flakes, pepper and salt followed by tomatoes and spinach
  3. Add shrimp and fresh cilantro.Cook until any excess water has been absorbed. Add in Chia Seeds.
  4. Make the Pancakes
  5. Fill Pancakes with the spinach and shrimp mixture. Garnish with tomato and lemon wedges. Serve warm.
