Our family is finally and consistently eating organic fruits and veggies. As I read more about our food supply and the importance of monitoring how and where all our food is grown, it dawned on me that our next big step is to switch our grains. While at Whole Foods I found 365 Organic - Enriched Organic Long Grain White Rice. I called the Whole Foods Brand 365 Private Label customer service number (512.477.5566 x 2002) to inquire about peanut/tree nut cross contamination. I was told that the rice is produced in a facility san the top eight plus corn. Sweet music to my ears! Given our exciting find, I think I will whip up an easy rice salad for dinner tonight with our organic veggies, organic yogurt and organic rice (As I type this I’m sighing a sigh that says “job well done mom”). 1 cup plain low-fat yogurt 3 tablespoons minced onion 1 tablespoon curry powder 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon turmeric 2 tablespoons cider vinegar 3 cups white rice, cooked and cooled 1 cup coarsely chopped green bell pepper 1 cup chopped zucchini Lettuce leaves, for serving Directions In a medium bowl, blend the yogurt, onion, curry powder, salt, pepper, turmeric, and vinegar. Stir in the cold rice, bell peppers, and zucchini. Refrigerate for one hour. Serve on a bed of lettuce leaves.
