So, I thought now's a good time to share the Orange Honey Ice Cream with a Pomegranate Swirl with you. Say that 10 times fast.
The inspiration behind this came from Jessica when she sent me this amazing Orange Honey Cream...
and then the nice folks at POM Wonderful sent me some of these little babies...
Which we absolutely loved! I had to play with it though. I couldn't just drink them.
The pomegranate syrup would be so good on waffles or pancakes too!
1 cup POM Pomegranate juice 5 drops NuNaturals vanilla stevia1/16 tsp xanthan gum
Combine the juice and stevia in a pot. Cook on medium heat, stirring occasionally until reduced to about 3/4 to 1/2 cup. Gradually add the xanthan gum while whisking. It will thicken to make a thick syrup. Place in the refrigerator and allow to cool completely.
Orange Honey Ice Cream
4 cups dairy free milk ( I used So Delicious Coconut Milk )
1/3 cup orange honey cream
4 droppers NuNaturals vanilla stevia
3 TBSP sugar
1/2 tsp xanthan gum
In a blender, combine the milk through sugar. While the blender is running, gradually add the xanthan gum. Freeze according to your machine's directions.
To add the swirl, once the ice cream is frozen, put the ice cream in a bowl or freezer container and swirl in the pomegranate syrup with a spoon. Freeze to firm the mixture up.
Now I just wish I had some for today!
