Accidental Scientist is co-ordinating the latest round of
Heart of the Matter (HotM), a food series to encourage heart-healthy eating. An appropriate food series for me to get involved in, but also a bit more complicated for me, as it has to be low in saturated fats and salt whilst still accomodating a gluten free diet. Difficult? Nah! I'm starting to get my head around this now!
The process of coronory heart disease begins when the coronory arteries become narrowed by the gradual build-up of fatty tissue (atheroma) within their walls (athersclerosis). Over time they may become so narrow that they cannot deliver enough oxygen rich blood to the heart muscle when it needs it, this can lead to pain (angina). The pain is caused by the heart muscle being starved of oxygen, worse still, it can become even more serious if a narrowed coronory artery becomes blocked by a blood clot, causing a heart attack
A healthy diet combined with a physically active lifestyle can reduce the risk of developing coronory heart disease and increase the chance of survival after a heart attack
The recommendations relating to food from the
British Heart Foundation (BHF), to reduce the risk of coronory heart disease, are: prevent the build up of atheroma by eating at least five portions of fruit and vegetables every day: reduce cholesterol by the reduction of animal fats in the blood circulation: eat at least two portions of fish per week, with at least one them being oily fish, for the omega oils in the fish: reduce salt to help reduce blood pressure and strive towards a healthy weight
Bearing in mind all the dietary advice from the BHF and the fact that my food has to be gluten free, I have devised this healthy celebratory breakfast, which is low in fat and salt, although a tad high in sugar, the upside being that at least the sugar is of the unprocessed variety
To serve 2-3 250 g mixed dried fruit (I used cranberries, figs - cut in half lengthwise, peaches and pears)
1 cup fresh orange juice
1/2 cinammon stick
3 cloves
3 black peppercorns
1 tbsp per person 0% fat Greek Yogurt
In a microwaveable bowl, add the fruit, spice and ornge juice, , leave to stand for at least an hour
Microwave for 4-5 minutes, untill the fruits have plumped up and the ornge juice has thickened
Leave the fruit to cool
Serve in individual bowls with a tablespoon of yogurt
