I found this extremely tasty chicken recipe in the winter edition of EasyCook , published by the BBC. A quick scan through this blog will immediately tell you that I use this magazine on a fairly regular basis, but this has to be one of the better recipes from this particular magazine. Its gorgeous!
1 orange
1 lemon
4 tbsp fine cut marmalade
1 tbsp olive oil
4 boneless chicken breasts with the skin on
small bunch of fresh thyme
2 medium red onions, cut into slim wedges
To Serve 2
Turn the oven to fan 180 degrees / conventional 200 degrees / gas no 6
Cut the orange and lemon in half and squeeze juice from one half of each into a bowl
Mix in the marmalade and the oil, season
Make 4 slashes in each chicken breast and put a sprig of thyme in each slash
Put the chicken and onions into a large baking dish
Cut the remaining orange and lemon halves into thin wedges and arrange around the chicken and onions
Spoon the marmalade mixture over the top and season
Scatter over a few more thyme sprigs
Bake for 30 minutes or untill the chicken is golden and cooked through
Serve with wholegrain rice
Cooks Note: I unexpectedly found a large amount of liquid in the baking pan (errr chicken is often imjected with water ????? even though the chicken I bought was actually sold as organic). I put the liquid into a small pan, left the chicken onions etc in the oven to cook, then reduced the liquid on the hob! Yes! A concentrated sauce of citrusy-chicken flavours to drizzle over the chicken
