Butternut Squash a la 'Something in Season'

After my recent trawl through my favourite blogs, something caught my eye. I mean really caught my eye, and I sort of had all the ingredients at home. Brendon of Something In Season has written a fabulous post about pumpkins. I was hooked, butternut squash is one of my favourite veggies, and more or less anything I've seen using pumpkin, I've been able to do with a butternut squash. Pumpkins in the UK are extremely seasonable, in as much as they are only available for a couple of weeks every year, whereas butternut squash is available virtually right round the year

I was only cooking lunch for myself today, so this is my adaption




Half a butternut squash
1 desertspoon of GF soy sauce
1 desertspoon of flavourless oil
1 desertspoon of lemon juice
1 large pinch of ground ginger
1 large pinch of a crushed cinnamon stick (yup, I know it would have been easier to use ground cinnamon ... but I've run out)

Remove skin and seeds from butternut squash and chop into largish chunks
Mix all the other ingredients together, give it a good shake, to combine
Toss the butternut squash in the dressing
Cook in a preheated moderate oven for about 45 minutes

Cooks Note: this needed sligtly more lemon juice and I can see me ommitting the cinnammon and adding galic and chilli to this, . That said, it tasted very good!
