Baby leaves, avocado and olive salad

I need to eat more fruit and veg while reducing the grains in my diet. Its fine when I go out to eat as I usually have salad in my meal somewhere, but at home my diet seems to be grain heavy. As we are currently under heatwave conditions in the UK, now turning to stormy weather, it seems a good time to inject the lighter food into my diet. Its way too hot to get in a car or walk too far, so a fridge raid was in order for lunch. Fridge raid lunches can be a bit scarey, but on this occasion produced a nice lunch. It appears an odd combination at first, but in fact worked well as the creaminess of the avocado was well set off by the saltiness of the olives ... best of all, it took about five minutes to prepare! No big drama with preparation either

A good handfull of assorted baby leaves with watercress
Avocado, peeled and sliced
Very small handfull of pitted and sliced olives
French dressing

Arrange the salad leaves on a plate, with the avocado arranged over them
Sprinkle the olives over the avocado and dress with the dressing of choice ... I used a classic french dressing, which worked perfectly

Further evidence of my addiction to avocado's ... I buy two every week when they are available, and have recently started to experiment with different ways of eating them. Slicing them up into a salad is a new one for me, but one that I shall definately be repeating
