No, I'm not in trouble. I cannot, however, believe that it is already May! Seems like yesterday that the kids were on winter break and we were skiing in Colorado. Time flies...
I somehow made it through another 45-minute boot camp this morning, but boy is it tough. There are times when I think that my arms or legs or whatever is being worked on are going to give out. Hopefully, it's working ;-)
Breakfast (Pre-Boot Camp) 1 whole wheat bagel square
1 T. almond butter
1 t. strawberry jelly
1 Propel
Snack (Post-Boot Camp) 3 slices turkey
1 cheese stick
handful of pretzel crisps
Lunch 1 c. vegetable soup
1 Laughing Cow cheese wedge
1/2 large sweet potato w/ 1 T. Smart Balance spread and cinnamon
NOTE TO SWEET POTATO FARMERS: Any way to get the potato a tad bit smaller?
Dinner Salad Creations salad w/ vegetables, sliced turkey, and tiny bit of feta cheese
*balsamic vinagrette on the side
1/2 of large sweet potato w/ 1 T. Smart Balance spread and cinnamon
*Smart move on getting the dressing on the side this time. Their idea of dressing is like 6 tablespoons (they gave me two of the little containers below). I probably used 1.5 T and was fine.
