Hadley Holistics pointed me in the direction of a delicious-sounding stuffed pepper recipe from the Whole Foods Web site. You can find it
here. WARNING to you busy girls and boys...this takes some time! I would suggest doing some prep work in the morning so you can throw everything together at night, or save it for a slower weekend day (ha, ha).
I didn't have to mom taxi tonight, so I made tacos for the peanut gallery that is my family and set to it. When he saw the ingredients, the husband's comment was something like "What the h$*L is that?" The boy's comment was, "Mama, you're like the person in 'Bedtime Stories' who makes the cake out of wheat germ and dirt." Can you understand what I am dealing with here?!
The end result was VERY tasty even though I was missing cumin, and I don't think my quinoa cooked correctly. It was filling, but not in a sick way. The flavors really popped, and I got a different flavor with every bite!
