IngredientsDressing - 1/3 c apple cider vinegar 3/4 c sugar 2 Tbs minced shallot (I forgot to get this so skipped it and it was still to die for!) 1/4 tsp dry mustard 1 tsp salt 6 Tbs light mayo 3 Tbs OJ 6 Tbs veg oil 1 1/2 tsp poppy seeds
Salad - Romaine lettuce Strawberries Blueberries Mandarin Oranges Fresh Pineapple (I bought a container of fresh, already cut pineapple)
In a food processor (which I don't have and used a blender just fine!), combine all but the last two ingredients of the dressing. Blend well. With the feed tube (lid opening) open, and the processor (blender) on, add in the vegetable oil slowly and continue processing until incorporated. Add the poppy seeds and pulse briefly to blend. Transfer to an airtight container until ready to use.
*NOTE: this makes a lot of dressing. If you are wanting just enough to serve at this meal, I suggest at least halving the recipe, otherwise you will have a lot left to use over the next couple weeks.
To make the salad, chop the lettuce and place individual servings on plates/bowls. Then add fruit and top with dressing.
