I am in a great mood this morning. No real reason for it, I just am. Gotta love that!
Anyhow, lets rewind to last night. On my drive home from work I was just itching for a run. I blame my incredibly slow day at work. I hardly got up from my desk all day, and I just needed to move. It rained all through the day, but slowed down, and then stopped about 5 minutes into my run! YAY!!
Halfway through, Lexie and I ran into this guy.
Lexie was not impressed to see him let me tell you! She went after him, then realized how big he was and backed off. Then went for him again and backed off. She really just didnt know what to do! Eventually he remembered he could fly, and flew up to someones rooftop. I still dont understand the purpose of these peacocks. Last time I counted 17, and there are probably more than that. Weird.
When we got home, Lexie ran off to the corner and I found her like this:
Standing beside her towel (yes I leave it on the floor, Im classy like that) staring at me, tail wagging. Now, you may notice shes not even wet, she just really likes it when I towel her down. So I did. My dog is strange.
I was in a hurry and had to make dinner super fast. It pretty much needed to be cooked and ready to go by the time I got out of the shower. I have a mass amount of veggies in my fridge right now so I decided to roast some veggies. Im out of olive oil, so I decided to use coconut oil because well, yum.
I quickly chopped up a bunch of veggies, threw on some sea salt, pepper and red pepper flakes and stuck them under the broiler. Im not sure if Ive mentioned it before, but Im severely lacking when it comes to baking dishes.
Yah, I roasted my veggies in a pie plate. Whatever, it worked.
I REALLY need to get some proper cookware!
I also had to pack my dinner away as soon as it was ready and take it to my parents house. I know Ive said it before, but I hate hockey. I dont care if its the Olympics, it doesnt change the fact that I hate hockey. So the only way my boyfriend can convince me to watch a game with him is if we go to my parents house and I steal their internet. He was obviously in a BIG rush to watch the game, so dinner came out of the oven, went into tupperware and we were out the door.
I paired it with some leftover couscous from the other night and it was delicious. The coconut oil was a really good touch. I love roasted veggies. Theyre always so good, and so easy. I cant wait for the summer when I can barbecue them.
After the hockey game we watched a little more Olympic action – Canada ROCKED it last night. Gold AND silver in the womens two woman bobsled. Amazing!
