Grain and Gluten-Free Chocolate Chocolate Chip Cookies

The baking bug bit me! I think it was kind of inevitable; snowy winter day, SHE (you know who…) is on her way, and a kitchen full of baking supplies. All the ingredients for a perfect baking storm. :lol:

Grain and Gluten-Free Chocolate Chocolate Chip Cookies


  • 1 cup blanched almond flour or almond meal
  • 1/4 cup arrowroot powder
  • 1/4 cup quinoa flour
  • 1/4 cup cocoa powder, preferably dark
  • 1/4 cup agave nectar
  • 1/4 cup sugar
  • 20 drops liquid stevia (NuNaturals vanilla)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp xanthan gum
  • 1 large egg
  • 4 TBSP butter / half stick, melted
  • 1/2 cup chocolate chips


  1. Preheat oven to 325F degrees
  2. Line line sheets with parchment paper or other nonstick component
  3. Add all ingredients in stand mixer bowl or large bowl for hand-held mixer or by hand; mix until everything is thoroughly incorporated. If using stand mixer, use hollow paddle attachment. Dough will be gummy when finished.
  4. Place cookie dough about an inch to inch and a half apart on baking sheet(s)
  5. Bake on 325F degrees for 8 minutes
  6. After removing from oven, take off of baking sheets immediately; transfer to wire cooling rack.

Makes approx. 20 cookies

I must say, I’m rather impressed with this recipe considering I came up with on a whim! :shock: They taste fantastic!! They have a brownie-like consistency and, actually, if you put the mixture in a brownie pan, you could probably bake them as brownies instead, lol. It’s hard to believe that they are gluten AND grain-free. Amazing! Nuts would be a great addition to them. Yum!
