It has an entirely wholesome list of ingredients and, best part: GRAIN FREE!! Perfect timing!
It’s pretty high in sodium, so I plan to use one serving and mix it with more tomatoes to stretch it further. It would be awesome if they came out with a lower sodium option! I’d buy it by the truckload, LOL. I haven’t tried these samples yet, but I already have a dozen ideas for it. Yum!

The chilly weather has definitely settled in this week. Brrrrrrr!! What’s better on a brisk fall day than a hot bowl of soup, right?
Chicken No Noodle Soup
1.25 lb skinless chicken tenders or chicken breast
1 quart, plus 2 cups low sodium chicken or vegetable broth (I used veggie broth)
3 to 4 carrots, sliced or diced
3 to 4 large stalks celery, sliced or diced
1 medium onion, diced
1 teaspoon turmeric
1/2 to 1 teaspoon salt, optional
Add all ingredients to crock pot or large covered pot with low heat on back burner; let cook for 6-10 hours or until chicken is thoroughly cooked. When chicken is very tender, gently break apart all large chunks with long fork or other cooking utensil until all chicken is shredded.
Makes 4-6 servings
I know, it looks like beef stew! The chicken started out as white meat, but I think the turmeric and vegetable broth darkened it as the soup cooked down. It still tasted like white meat chicken, though.
I had a bowl of it with one of the grain-free white cheddar pumpkin seed rolls I made the day before. Delicious!
I splashed a little Tabasco in my soup to kick it up a few notches. I made a side of noodles for Dustin to add in, but I enjoyed it without the noodles. It was SOUPer yummy!
Tuesday’s Almost Grain Free Diet Menu
About an ounce of reduced fat/sodium cheddar cheese
.75 oz mild cheddar cheese
Bowl of chicken no noodle soup
Grain-free homemade white cheddar pumpkin seed roll
Salad: romaine lettuce, baby spinach, red cabbage and radicchio cole slaw, EVOO + red wine vinegar
2 Sargento reduced fat mozzarella string cheese
Two 3 Musketeer minis
1/2 cup Haagen Dazs Five ice cream – coffee flavor
Yeah, with Aunt Flo in town, ice cream was a must. I love Haagen Dazs Five (five ingredients!); it’s so creamy and rich, yet lower in fat/calorie than their regular. It’s blissful! I still have 1/3 of the pint left since Tuesday, so I think I’ve paced myself pretty well.
